"BEET it up!" - Beet Smoothie

Ingredients
  • 1 cup coconut water
  • 1 medium beet, peeled and cut into pieces
  • 6 strawberries
  • 3 medjool dates
  • 2 Tablespoons coconut, shredded or flaked
  • ½ teaspoon vanilla extract
  • ice cubes (optional)
Instructions
  1. Place all ingredients in a blender and blend until smooth. Garnish with additional coconut flakes if desired.
  2. Sip! Slurp! Enjoy!...repeat.
