Strawberry Avocado and Feta Salad + Poppy Seed Dressing

Serves: 2-4 servings
For the Salad
  • 6 cups baby spring lettuce mix (or butter lettuce)
  • 16 large strawberries, sliced (about 1 cup)
  • 1 avocado, pit removed and cut into pieces
  • 2 Tbsp. chopped cashews (or nuts of your choice)
  • 2 Tbsp. crumbled feta cheese
For the Dressing
  • 3 tablespoons sugar
  • 3 tablespoons light mayonnaise
  • 2 tablespoons fat-free milk
  • 1 tablespoon poppy seeds
  • 1 tablespoon white wine vinegar
For the Salad
  1. Combine all salad ingredients and mix thoughly
For the Dressing
  1. Combine all dressing ingredients in a small bowl and whisk to mix thoroughly.
To Serve
  1. Plate salad and drizzle with dressing.
