Baked Salmon- There is just something magical about Salmon + Honey! It's like the honey perfectly engulfs the salmon and locks in all the flavor and juiciness and what you get is a virtually fool-proof way to bake moist, flavorful, salmon. Season it with a a few spices { like smoked paprika, cumin and coriander} and it's just flavor perfection. Did I mention it was healthy too!

Serves: 2 servings
  • 2 salmon fillets (approx.5- 6 oz. each ,skin on) (wild King or your favorite variety)
  • 2 Tbsp olive oil
  • 2 Tbsp honey
  • 1 Tbsp lemon juice
  • 1 tsp smoked paprika
  • ¼ tsp ground coriander
  • ¼ tsp cumin
  • ½ tsp salt
  • pepper to taste
  1. Preheat oven to 375F
  2. Rinse salmon and pat dry with paper towel. set aside
  3. Mix marinade ingredients thoroughly in a medium bowl (large/deep enough to fit salmon) Add salmon and let marinate 10-20 minutes.
  4. Arrange salmon on a foil (or parchment paper) lined baking sheet, skin side down. Reserving remaining marinade for later.
  5. Bake until salmon is cooked through to your liking approx. 15-20 min.,basting ½ way through with remaining marinade. Let salmon rest 5 min. (outside of oven) before serving (Salmon will continue to cook during this time so keep this in mind when removing salmon from oven) .
Recipe Notes:

The salmon continues to cook once you've removed it from the oven. You'll want to error on the side of removing the salmon when it is still looking just a tiny bit undercooked (darker pink). By the time the salmon has rested (5 minutes) you should have a perfectly cooked fillet.
