White Chocolate Cinnamon Roll Energy Bites

Serves: approx. 20 energy bites
  • 1 cup rolled oats
  • ½ cup peanut butter
  • ½ cup white chocolate chips
  • ⅓ cup honey (or agave)
  • 1 tsp vanilla extract
  • ¾ tsp cinnamon
  1. Combine all ingredients in a medium bowl and stir to mix thoroughly. Refrigerate mixture for at least 30 minutes.( up to 1 hour).
  2. Form into 1 inch balls.
  3. Store in an airtight container in the refrigerator.
Optional- on a flat surface(like a plate) combine a pinch of sugar and a pinch of cinnamon. Roll energy bites for a little extra cinnamon flavor.
