Pumpkin Spice Quinoa Pancakes

Serves: 6 medium or 10 small pancakes
  • 1 cup cooked quinoa
  • ¾ cup all purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • ½ tsp nutmeg
  • ½ tsp all spice
  • ¼ tsp salt
  • 1 egg
  • ⅓ cup canned pumpkin (not pumpkin pie filling)
  • ¼ cup low-fat milk
  • 2 tsp maple syrup
  • Pecans, powdered sugar, maple syrup or any toppings of your choice
  1. In a medium bowl combine quinoa, flour, baking powder, spices and salt. In another medium bowl stir together egg, pumpkin, milk and maple syrup until thoroughly combined. Add egg mixture to flour mixture and fold together.
  2. Coat a large skillet (or griddle) with non-stick spray and heat over medium-high. Scoop approx. ¼ cup batter per pancake into skillet and cook approx. 3 min on each side. ( you may need to work in batches depending on the size of your skillet or griddle). Serve with maple syrup and pecans (or toppings of your choice) .
