Mango Salsa and Baked Corn Tortilla Chips

Serves: 2 cups salsa
Ingredients
Mango Salsa
  • 1 mango, peeled and diced
  • 1 red pepper, diced
  • ⅓ cup red onion,diced
  • ¼ cup cilantro, roughly chopped
  • 1 small jalapeno, seeded and diced (optional)
  • 1 tbsp lime juice
  • salt and pepper to taste
Baked Tortilla Chips
  • 12 6 inch corn tortillas ( preferably white corn)
  • olive oil, for brushing tortillas
  • sea salt
Instructions
Mango Salsa
  1. Combine mango, red bell pepper, onion, lime juice, jalapeno, and cilantro in a bowl. Refrigerate for at least ½ hour to let flavors mingle.
Baked Tortilla Chips
  1. Brush both sides of each tortilla with olive oil
  2. Stack the tortillas and cut( like a pizza) into 8 slices
  3. Spread chips out on a large baking sheet, in a single layer, and sprinkle with salt.
  4. Bake in a 350 degree oven for approx 12-15 min. until the chips are golden brown and crisp.
