Healthy Lemon Chia Seed Muffins

Ingredients
  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 1 Tbsp chia seeds (or poppy seeds)
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 egg
  • 1 cup part-skim ricotta
  • ½ cup water
  • ¼ cup honey
  • ¼ cup applesauce (unsweetened)
  • 2 Tbsp lemon juice (approx. juice of 1 lemon)
  • 1 Tbsp lemon zest
  • ½ tsp almond extract
Instructions
  1. Preheat oven to 350F. Line a standard 12-cup muffin tin with baking cups.
  2. In a medium bowl combine dry ingredients - flour, sugar, chia seeds, baking powder, baking soda and salt. In a separate bowl lightly beat egg with a fork, add ricotta, water, honey, applesauce, lemon juice, lemon zest and almond extract. and mix to thoroughly combine.
  3. Divide batter between muffin cups and bake until tops of muffins spring back when lightly touched (or until a toothpick inserted into the center of the muffin comes out clean) approx. 16-18 min.
