"Snowball" Coconut Date Energy Bites

Serves: 12-15 bites
  • 1 cup Medjool dates, pitted
  • ½ cup shredded coconut, divided
  • ½ cup walnuts ( or other nut/seed of choice)
  • 1 Tbsp coconut oil
  • 1 tsp vanilla extract
  1. In a small microwave proof bowl/cup, melt coconut oil ( approx 20 seconds)
  2. In a food processor ( or blender) , pulse the dates to create a thick paste. Add walnuts, ¼ cup shredded coconut, melted coconut oil and vanilla extract. Pulse again to incorporate and create a paste/uniform batter. Transfer paste/batter to a medium bowl.
  3. Place remaining shredded coconut (1/4 cup) in a low shallow bowl or plate.
  4. Using a spoon, scoop approx. 1 to 1½ teaspoons of paste and roll between hands to create a ball. Roll ball in shredded coconut (pressing lightly) until well covered. Place on a clean plate, repeat until all paste/batter has been formed into balls.
  5. Refrigerate until firm ( at least 15 minutes) .
