Honey Cinnamon Breakfast Quinoa

Serves: 2
  • ¼ cup low-fat milk
  • ¼ cup water
  • ¼ cup quinoa, rinsed
  • ½ cup blackberries
  • ½ cup peaches, diced
  • ⅛ teaspoon cinnamon
  • 1 teaspoon honey (or agave)
  • 1 tablespoon pecans ( or your favorite nuts, like almonds or walnuts)
  • sliced fresh fruit for topping ( i used grapes, strawberries, blackberries, & peaches)
  1. Bring milk, water and quinoa to a boil. Reduce heat, cover and simmer for 15 min. until all liquid is absorbed and quinoa is soft and translucent.
  2. Let cool 5 min. Stir in blackberries, peaches, cinnamon and honey.
  3. Serve in individual bowls and top with additional fresh fruit and pecans.
You may want to drizzle a little extra honey on top for some additional sweetness.
