New Years is such a great time for reflection. Time to reflect back on the previous year and be grateful for all the wonderful things that have happened. It's also a time to review whats worked (and keep doing it) as well as introduce some new habits/activities etc. into the mix to make the New Year even better ( hello more exercise and travel I'm talking to you this year)

1.Spinach + Goat Cheese (or Feta) Hasselback Chicken
Seriously! This is one of the easiest and quickest ways to make super delicious and flavorful chicken breasts. By making slits in the chicken breasts (Hasselback) and stuffing them with tasty things like spinach and goat cheese, you’ll get a hit of savory cheesy goodness in every bite!
2.Healthy Chicken Ramen Bowl
Super simple to make! You only need one pot and about 20 min. cook time. Before you know it you’ll be slurping up this flavorful soup with tons of noodles, healthy veggies, soft set eggs and a dash of hot chili oil ( or sesame oil if you’re not into spicy). { Clean-eating, healthy, easy}
3. Mandarin Orange Chicken Salad Stuffed Avocado
Asian inspired Mandarin Orange Chicken Salad, a combo of shredded chicken ,fresh in season Mandarin oranges (or use canned) , red grapes, crunchy celery and almonds. Served in an avocado “bowl” and drizzled with poppy-seed dressing. A perfect light lunch or dinner that takes only 15 min. to whip up!
4. Quick + Easy Black Bean Enchilada Quinoa
So quick and easy! Healthy quinoa, black beans, corn, sweet potato, tomatoes and enchilada sauce cook up in one pot for a healthy Mexican feast. I added some kale and Mexican cheese for an extra punch of veggie power and well..cheese! Ready in about 20 mins. {Vegetarian, GF, Vegan(omit cheese) }
5. Super Easy Roasted Winter Vegetables
I have made these Easy Roasted Winter Vegetables SO SO many times! They are perfect as a side dish and equally as perfect to add to your salads or buddha bowls (stay tuned for Sweet Potato + Quinoa Buddha bowls coming up a bit later this month).
6. Baked Orange Cauliflower + Forbidden Rice
Cauliflower florets are coated in panko crumbs and baked (not fried) to golden brown crispy perfection and topped with a sweet orange chili glaze. A healthy vegetarian version of Panda Express Orange Chicken. Ready in about 30 min. {under 350 cal., vegetarian, vegan option, clean eating}.
7. Faux Loaded Potato Skins
Faux loaded potato skins? Say what? Yep..not one potato in this recipe…but you’d never know it! Tastes just like loaded potato skins! You know with cheese and sour cream, tomatoes and bacon? But they are healthy, low-carb and low-calorie! ( 64 calories each). Perfect for your super bowl party, game day, pot-luck,..or heck just for lunch! {low-carb, low-calorie, GF, Vegetarian option}
8. Crockpot Chicken Posole
Tender bites of shredded chicken, hominy and green chiles in a flavorful/spicy broth. Topped with avocado, sliced radishes, crispy cabbage , queso fresco (Mexican crumbling cheese found at most grocery stores), fresh cilantro and a squeeze of lime. Only about 5-10 min prep time and can be slow-cooked for hours in the crockpot or if you prefer can be cooked on the stove-top in less than 30 min.

Tasty bites of chicken in a light hoisin sauce with sautéed red bell pepper, celery and water chestnuts topped with crunchy cashews . You can have this on the table in about 15 min (if you use quick cooking rice). Skip the take out..make it at home. It’s so easy and more economical!

Jumbo macaroni pasta shells are stuffed with a tasty medley of veggies and ricotta cheese. Topped with marinara (or your favorite pasta sauce) and melty Italian cheeses. Tastes like lasagna, but it’s lighter and has fewer calories. {vegetarian, easy, kid-friendly}
11. High Protein Oatmeal Pancakes
A breakfast high in protein helps fuel you up and keeps you feeling full longer. Heart healthy and heart-shaped, these High Protein Oatmeal Pancakes swap in oats (instead of flour) and cottage cheese (instead of milk) for a higher protein breakfast option. Make them in the shape of a heart for your sweetie for Valentines Day.

Small pearl shaped pasta (Israeli couscous) combined with fresh cucumber, tomato, bell pepper,parsley and feta make a great light meal or side dish. Spice rubbed pork tenderloin with homemade chunky applesauce, just might be one of the easiest things you’ll make this week! Plus it’s lean, healthy, clean-eating, high protein and gluten-free, whoosh! That’s a lot of goodness and did I mention roasted pork tenderloin is also budget friendly?
14. Pecan Crusted Oven-Baked Salmon ( Sheet-Pan)
Crazy easy!. This pecan crusted oven baked salmon dinner takes just a few minutes of prep time. Salmon,veggies and sweet potato cook together on one sheet-pan. About 20 min. later out pops a healthy and delicious complete meal.
15. Slow Cooker Carnitas Tacos
Let the crockpot do most of the work! Spice rubbed pork cooks long and slow ,until it’s so tender it’s falling off the bone! Shredded with two forks and a quick zap under the broiler gives the pork those authentic golden brown and crispy edges. Topped with a bright and flavorful corn salsa (corn, avocado, bell pepper,onion, cilantro and a squeeze of lime) and tucked into a warm tortilla. {Easy, clean eating, crockpot meal}

Mmmmm…cheesecake for breakfast! Well kind of. This cheesecake protein smoothie tastes just as decadent as a slice of strawberry cheesecake but with one BIG difference…it’s healthy! In addition to that it’s full of protein! and can be made in less than 5 mins. {Vegan, Clean-Eating, High Protein}
