Easy Blueberry Compote

Fresh or frozen blueberries are simmered with honey , a splash of lemon and a touch of vanilla to create a healthy jam like sauce that can be served warm or cold. Perfect for serving over oatmeal, pancakes/waffles, ice cream/frozen yogurt or spread it on toast.

Ingredients

  • 1 pint fresh blueberries or 2 cups frozen
  • 2 tablespoon honey or maple syrup/ agave for Vegan option
  • 1 teaspoon vanilla extract optional
  • 1 teaspoon lemon juice

Instructions

  • In a medium saucepan, combine 1 cup blueberries, honey, lemon juice and vanilla extract and gently mix. Heat over medium heat, stirring occasionally for 10 mins.
  • Add remaining blueberries and continue to cook for an additional 8 mins, or until compote reaches your desired consistency, stirring frequently. Serve warm or cold.

How to store blueberry compote
Store in an airtight container ( Mason jars work great!) for up to 2 weeks

How to reheat blueberry compote
If you’d like to serve the compote warm it can be reheated in the microwave (in a microwave safe dish) or in a small pan on the stove-top.
Double the Recipe
This recipe uses 1 pint of blueberries ( 2 cups) and will yield about 1 cup of compote. You can easily double or triple the recipe depending on your needs.
Switch up the fruit
This recipe also works great with other fruits like strawberries, raspberries, blackberries and peaches.
