"Snowball" Coconut Date Energy Bites

Ingredients

  • 1 cup Medjool dates pitted
  • ½ cup shredded coconut divided
  • ½ cup walnuts or other nut/seed of choice
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract

Instructions

  • In a small microwave proof bowl/cup, melt coconut oil ( approx 20 seconds)
  • In a food processor ( or blender) , pulse the dates to create a thick paste. Add walnuts, ¼ cup shredded coconut, melted coconut oil and vanilla extract. Pulse again to incorporate and create a paste/uniform batter. Transfer paste/batter to a medium bowl.
  • Place remaining shredded coconut (¼ cup) in a low shallow bowl or plate.
  • Using a spoon, scoop approx. 1 to 1 ½ teaspoons of paste and roll between hands to create a ball. Roll ball in shredded coconut (pressing lightly) until well covered. Place on a clean plate, repeat until all paste/batter has been formed into balls.
  • Refrigerate until firm ( at least 15 minutes) .
