Peach Caprese

Sweet summer peaches plus the classic caprese ingredients …vine ripened tomatoes, fresh mozzarella and fresh picked basil drizzled with olive oil and balsamic vinegar is a perfect light meal, appetizer or side dish.

Ingredients

  • 3 peaches cut into thick slices (peel first if desired)
  • 3 to matoes sliced thick (vine-ripened, Heirloom, or tomatoes of your choice)
  • 6 oz. fresh mozzarella sliced (or torn)
  • Fresh basil torn into bite size pieces
  • Olive oil
  • Balsamic vinegar *
  • Sea salt and fresh ground pepper

Instructions

  • Arrange peach, tomato and mozzarella slices on a platter or individual plates. Add basil and drizzle with olive oil and balsamic vinegar. Salt and pepper to taste.

Notes

* if you have time, you can make a balsamic reduction sauce by adding ⅓ cup balsamic vinegar + 1 teaspoon sugar to a saucepan. Bring to a boil and immediately reduce heat to low. Simmer for 20 min. until sauce is reduced to about half and is a thick consistency.
