Jerk Chicken + Pineapple Slaw

Ingredients

  • 3 heads baby bok choy trimmed and thinly sliced
  • 2 cups shredded red cabbage
  • ½ of a fresh pineapple peeled, cored, and chopped
  • 2 Tbsp. cider vinegar
  • 4 tsp. packed brown sugar divided
  • 2 tsp. all-purpose flour
  • 2 tsp. Jamaican jerk seasoning *
  • 4 skinless boneless chicken breast halves (1 to 1 ¼ lbs. total)

Instructions

  • In a large bowl combine bok choy, cabbage, and pineapple. In a small bowl or measuring cup combine vinegar and 2 tsp. brown sugar. Drizzle over bok choy mixture and mix to coat. Set aside.
  • In a large plastic bag combine 2 tsp. brown sugar, flour and jerk seasoning. Shake to mix ingredients. Add chicken and shake to coat chicken.
  • Using a paper towel rub a thin layer of oil on grill pan. Heat pan over medium heat. Add chicken and grill for 8-12 min. until chicken is cooked through. Flipping halfway through.
  • Plate chicken and serve with pineapple slaw.

*Make your own jerk seasoning by combining 1 teaspoon onion powder, ½ teaspoon each sugar, crushed red pepper, and crushed dried thyme, ¼ teaspoon each salt, ground allspice, and ground cinnamon.
