"Immune Booster" Carrot Apple Juice- Fuel your body with immune boosting nutrients! Fresh carrot and apple juice with a hint of ginger can be made with or without a juicer.{Clean Eating}

Ingredients

  • 5 large carrots, cleaned and tops trimmed off
  • 2 medium apples, cored and quartered Fuji or Granny Smith
  • 1 (1 inch) knob of ginger (you may want to reduce the amount of ginger if not using a juicer)
  • juice of ½ lemon

Instructions

To Make Juice with a Juicer

  • Put carrots, apples, and ginger through the juicer according to manufacturers instructions.
  • Add juice of ½ lemon to the carrot juice mixture.
  • Pour, enjoy! (and hear your immune system kicking into high gear!)

To Make Juice without a Juicer

  • Peel carrots and apples and cut into approx 1 inch pieces.
  • Add apples and ½ cup water to a blender. Blend on high until smooth.
  • Add carrots, juice of half a lemon and ginger to the blender.(The ginger flavor will be stronger in this version vs. running through a juicer so you may want to start with a smaller amount of ginger and taste the juice , adding more to blend if desired). Blend on high until smooth. You may need to add some additional water (¼-1/2 cup) to the blender to obtain a smooth blend.
  • Place a fine mesh strainer over a large bowl (or measuring cup with spout) and pour contents of blender in strainer. Use a rubber spatula or spoon to press the pulp and help squeeze the juice from the pulp. Allow to sit for a few minutes until juice strains through.

Notes

Store juice in an air-tight container ( like a mason jar) in the refrigerator for up to 2 days.
