Cauliflower "Mac" & Cheese {Keto, Low Carb}

- 1 large head of cauliflower cut into bite sized florets (about 2 lbs/4 cups)
- ½ cup heavy cream
- 2 oz. cream cheese cut into small pieces
- 1 teaspoon Dijon mustard
- 1 ¼ cups shredded Sharp Cheddar Cheese divided ( or shredded White Cheddar)
- ½ cup shredded mozzarella cheese
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- Salt and pepper to taste
Preheat oven to 375 F. Spray an 8 x 8 baking dish with non-stick spray. Set aside.
Bring a large pot of water to a boil. Add cauliflower florets and cook until crisp tender ( about 5 mins.). Drain cauliflower and pat dry with paper towels. Place cauliflower in baking dish, set aside.
In a small sauce pan, bring cream to a simmer, whisk in cream cheese and mustard until fully combined. Add 1 cup cheddar cheese, mozzarella cheese, garlic powder, onion powder and salt and pepper. Continue whisking until cheese is melted (about 1-2 mins.).
Pour cheese mixture over cauliflower in baking dish. Sprinkle remaining ¼ cup cheddar cheese on top and bake (uncovered) for 15 minutes, or until the top is browned and bubbly. Serve.
