In a small microwave proof bowl/cup, melt coconut oil ( approx 20 seconds)
In a food processor ( or blender) , pulse the dates to create a thick paste. Add walnuts, 1/4 cup shredded coconut, melted coconut oil and vanilla extract. Pulse again to incorporate and create a paste/uniform batter. Transfer paste/batter to a medium bowl.
Place remaining shredded coconut (1/4 cup) in a low shallow bowl or plate.
Using a spoon, scoop approx. 1 to 1 1/2 teaspoons of paste and roll between hands to create a ball. Roll ball in shredded coconut (pressing lightly) until well covered. Place on a clean plate, repeat until all paste/batter has been formed into balls.
Refrigerate until firm ( at least 15 minutes) .
