1-1 ¼lb.thin-sliced boneless skinless Chicken breastcutlets or tenders
4oz.corn tortilla chips
2tablespoonpackaged taco seasoning *or make your own- instructions below
3tablespoonflour
1large egglightly beaten
garnish with sliced tomatoesavocado slices, corn, fresh cilantro (optional)
Instructions
Preheat oven to 425 F. Line a baking sheet with parchment paper.
Wash and pat dry chicken. Set aside.
Crush tortilla chips (with hands or in a food processor/blender) and add to a shallow bowl. Add taco spices and mix to incorporate. In a second shallow bowl add flour. In a third shallow bowl, add egg and lightly beat with a fork.
Dredge chicken in flour;then dip in egg and roll through the tortilla chip crumbs, patting gently to coat. Place coated chicken to prepared baking sheet. Repeat with remaining chicken pieces.Bake until chicken is cooked through 10-12 minutes.
Top with sliced tomatoes, avocado slices, corn and fresh cilantro (optional)
Notes
** Make your own taco seasoning by combining : 1 tablespoon chili powder 1 teaspoon cumin ½ teaspoon paprika ¼ teaspoon each- garlic powder, onion powder, crushed red pepper, oregano, black pepper
