Ingredients

  • ½ lb. lean ground beef or turkey
  • 2 cloves garlic minced
  • 1 carrot peeled and shredded
  • 3 cups fresh spinach
  • 1 cup canned navy beans or garbanzo
  • 1 cup diced tomatoes canned or fresh
  • ¼ cup green onions chopped
  • 2 teaspoon grainy mustard
  • 2 teaspoon apple cider vinegar
  • 1 teaspoon ketchup
  • 1 teaspoon maple syrup
  • 4 whole wheat or seeded hamburger buns

Instructions

  • In a large sauté pan (with lid) cook ground beef on medium-high until browned. If necessary, drain any fat from pan. Add garlic and stir to combine.
  • Add carrots and spinach to ground beef and stir until the spinach begins to wilt (approx. 1-2 min.). Add remaining ingredients (beans, tomatoes, green onion, mustard, vinegar, ketchup and maple syrup). Reduce heat to medium and cover the pan. Allow mixture to simmer, stirring occasionally, until completely cooked (approx. 8-10 min.)
  • Toast the buns (if desired) and spoon mixture onto buns.

I added another handful of fresh spinach and some additional shredded carrots to the mixture right before serving so the Joes would have a little fresh veggie crunch.
