Mango Salsa and Baked Corn Tortilla Chips

Ingredients
Mango Salsa

mango
peeled and diced
1
red pepper
diced
⅓
cup
red onion
diced
¼
cup
cilantro
roughly chopped
1
small jalapeno
seeded and diced (optional)
1
tablespoon
lime juice
salt and pepper to taste
Baked Tortilla Chips

inch
corn tortillas
preferably white corn
olive oil
for brushing tortillas
sea salt
Instructions
Mango Salsa
Combine mango, red bell pepper, onion, lime juice, jalapeno, and cilantro in a bowl. Refrigerate for at least ½ hour to let flavors mingle.
Baked Tortilla Chips
Brush both sides of each tortilla with olive oil
Stack the tortillas and cut( like a pizza) into 8 slices
Spread chips out on a large baking sheet, in a single layer, and sprinkle with salt.
Bake in a 350 degree oven for approx 12-15 min. until the chips are golden brown and crisp.
