Healthy Lemon Chia Seed Muffins

Ingredients

  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 1 tablespoon chia seeds or poppy seeds
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 egg
  • 1 cup part-skim ricotta
  • ½ cup water
  • ¼ cup honey
  • ¼ cup applesauce unsweetened
  • 2 tablespoon lemon juice approx. juice of 1 lemon
  • 1 tablespoon lemon zest
  • ½ teaspoon almond extract

Instructions

  • Preheat oven to 350F. Line a standard 12-cup muffin tin with baking cups.
  • In a medium bowl combine dry ingredients - flour, sugar, chia seeds, baking powder, baking soda and salt. In a separate bowl lightly beat egg with a fork, add ricotta, water, honey, applesauce, lemon juice, lemon zest and almond extract. and mix to thoroughly combine.
  • Divide batter between muffin cups and bake until tops of muffins spring back when lightly touched (or until a toothpick inserted into the center of the muffin comes out clean) approx. 16-18 min.
