    Hi there! Welcome to Simple Healthy Kitchen. I’m Susan Randall and I’m really happy you stopped by.

    Simple Healthy Kitchen is a food blog featuring simple healthy meal ideas that can be prepared in 30 min. or less. Every month will focus on “what’s in season “and finding new tasty (but simple) ways to enjoy vibrant, colorful, in season fruits and vegetables.

    I’m happy to call Seattle home these days…where it’s always green, and green things (aka healthy veggies) are always easy to find. We’ll be whipping up lots of fun stuff!

    Life is busy, and sometimes it’s difficult to make healthy choices. The goal of this blog is to provide some inspiration and easy recipe ideas to help incorporate health into your busy schedule. We can do this by making yummy delicious food (quickly) and by getting the body moving a bit more.

    I recently had a milestone birthday. I think these big events tend to make us reflect on life. Appreciate what is good and work on what could be better. One thing was very apparent...I’d gotten a bit off track. I’d gotten lost in the chaos of everyday life and fallen out of my good health habits. I feel so much better when I am eating healthy and getting some form of exercise. It’s SO critical, yet I had let it slip to the back burner to focus on whatever the project du jour was.

    I did three things:

    1. I simplified my life- downsized and moved to a cute little apartment above a yoga studio. Which just happens to be smack dab in the middle and walking distance to all my favorite kitchen gadget stores (Williams Sonoma, Sur la Table, and Crate and Barrel) Hello! Sweet! And oh my, where am I going to put all these really fun kitchen gadgets? I’ve started doing yoga and am really enjoying the journey to finding new balance and flexibility.

    2. Bought a Fitbit- it's a device that tracks your steps, activities, calories burned, and sleep patterns. I am challenging myself to 10K steps a day (you can read more about Fitbit here). .

    3. Started this blog- to help create easy to prepare healthy recipes. Nothing complicated, nothing fussy, just good food, really simple.
