    Buffalo Chickpea Pizza

    Kick up your pizza night a notch with this super easy Buffalo chickpea pizza. Chickpeas are tossed with Buffalo wing sauce (or regular hot sauce) for a kick of heat and piled high on top of melty mozzarella cheese , spinach and sliced red onions. Once cooked the Buffalo Chickpea Pizza is topped with a creamy ranch dressing (made with Greek yogurt) and crunchy celery and carrots. {Vegetarian}

    If you love the tangy flavor of Buffalo wings you’re going to love this pizza! Especially when you find out how ridiculously easy it is to whip up!

    In the interest of time I’m making this Buffalo Chickpea Pizza with pre-made pizza dough. You know the kind you can get at the grocery store or Trader Joes that comes as a big dough ball (either in the fresh or frozen section) you just have to roll or stretch it out to the desired size of your pizza.

    While I usually prefer to make things from scratch, there are some things I just don’t do well (or more likely have the patience for..hello …messy, mixing, rising, lots of time...pizza dough). Since it’s possible to find some good quality (no crazy preservatives or additives) pizza dough already made that’s the route I’m selecting. You can also find good options for pre-made pizza crusts in the frozen section of the supermarket or Whole Foods. (even gluten-free or vegan). Or even top a piece of pita or naan bread.

    Oh course if you are dead set on making your own pizza dough you can do that too. Katherine over at Cookie + Kate has what looks to be pretty easy whole wheat pizza dough recipe here.

    Once you’ve got the pizza dough prepped on the pizza pan (or baking sheet)  you just have to decide how spicy you want your pizza to be. Like it hot? Lather on a layer of Buffalo wing sauce or hot sauce and top with mozzarella cheese some sliced red onions. spinach and chickpeas that have been mixed with some wing/hot sauce. Don’t want things too spicy? No problem just omit the layer of hot sauce, you can always add a bit more before serving.

    You know when you order chicken wings and they come with some ranch dressing for dipping and sliced celery and carrots? There is just something about that flavor combination, the spicy Buffalo sauce, the cool ranch dressing and the crunchy celery and carrots!it works!  And that’s what I’m topping this pizza with! Except I’m making my own healthier version of ranch dressing with Greek yogurt.

    Prepare to bite into some spicy Buffalo, melty cheese, creamy ranch, crunchy veggie pizza pie.

    Buffalo Chickpea Pizza

    Ingredients
      

    For the Pizza

    • 1 ball prepared pizza dough 16 oz. fresh or frozen (or your favorite pre-made pizza crust)
    • olive oil for brushing pizza dough
    • 1 can chickpeas 15 oz.
    • 2 tablespoon hot sauce like Franks original hot sauce or Buffalo wing sauce (like Franks Buffalo wing sauce)
    • ½ cup shredded mozzarella cheese
    • sliced red onion according to taste
    • ½ cup spinach torn in small pieces
    • 1 stalk celery cut into pieces
    • 1 carrot peeled and cut into pieces
    • cilantro for garnish

    For the ranch dressing

    • 1 container 6 oz. plain Greek yogurt
    • 1 teaspoon dried dill weed
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • ½ teaspoon dried parsley
    • dash Worcestershire sauce
    • dash cayenne pepper
    • salt and pepper to taste

    Instructions
     

    • Preheat oven to 450F
    • Spray a pizza pan or baking sheet with cooking spray. Stretch dough (or use a rolling pin) according to package direction. Place dough on pizza pan (10" or 12") or baking sheet and lightly brush top with olive oil. Optional step- for spicier pizza add a thin layer of Buffalo wing sauce or hot sauce on top of pizza (leaving about ½ inch border around sides for the crust) . Top with mozzarella cheese.
    • Combine garbanzo beans and hot sauce in a small bowl. Spoon mixture over the top of pizza and top with torn spinach and sliced red onions. Place in oven and cook according to package directions for dough (approx. 8-12 min.) until crust is golden brown.
    • While pizza is cooking prepare the Ranch dressing by combining all ingredients in a small bowl and mixing thoroughly. If necessary add a small amount of milk or almond milk to achieve desired consistency.
    • Remove pizza from oven and top with celery, carrots and ranch dressing.Add cilantro and more hot sauce if desired.

    Notes

    **Because the nutritional values for the dough you select will vary widely I am including the nutritional/calories for just the toppings portion (everything listed in this recipe except the dough) for this pizza. That way you can have a more accurate idea based on the dough you select.
    ** The dough I used had 130 calories per slice - making one slice of pizza a total of 245 cal.
