You know those nights when you really have no idea what you're going to make for dinner? and you don't feel like making a trip to the grocery store, or dealing with anything complicated? Well here's a recipe for those kind of nights! Chances are you've got everything you need already.
15 Minute Honey Paprika Chicken is made with pantry staples ….here's what you’ll need:
- Boneless skinless chicken thighs - fresh or frozen ( you can also use bone-in skinless/ or skin on- just adjust the amount of chicken and the cooking time – notes in recipe)
- Spices -pantry staples like chili powder, garlic powder, cumin, dried parsley (optional), smoked paprika ( you can also use regular (sweet) paprika if you don’t have the smoked version, red pepper flakes , salt & pepper.
- Honey
- Apple cider vinegar ( or lemon juice)
The secret to this recipe is the spices. The combination of a bit of spicy, a bit of smokey just works! Especially when a the chicken is brushed with a tangy honey glaze. It's like the trifecta of flavor!
What type of Paprika should you use?
Smoked Paprika- is my preference and in my opinion it's worth seeking out this spice if it is not already a part of your pantry staples. It's made with sweet peppers (not hot peppers) that have been smoked and dried and then crushed. It has a unique smokiness without the heat of cayenne pepper or red pepper flakes. It has a warm smokey flavor, that is great on chicken, fish, pork, potatoes, rice...and so much more.
Sweet Paprika - If you don't happen to have smoked paprika you can absolutely substitute regular paprika (aka sweet paprika) made with dried peppers that have been crushed (but not smoked).
Broiling vs. baking
This recipe calls for broiling the chicken and finishing it off by brushing a glaze of honey/apple cider vinegar over the chicken for the final few minutes of cooking..ensuring a caramelized crunchy flavorful outside and a tender juicy inside.
Honey Paprika Chicken pairs well with:
Endless options here! Some of my favorites include a simple Caesar salad, roasted broccoli, over rice, with roasted potatoes, or Skillet Mexican Street Corn
Make once serve multiple ways: Here are a few ideas:
- Slice chicken and serve over a Cobb/Caesar salad
- Chop chicken into bite size pieces add a touch of light mayo and chopped celery to make a chicken salad ( stuff in an avocado, or a tortilla wrap, or sandwich)
- Shred chicken (with two forks) and serve in tacos with lettuce, tomatoes etc.
Recipe Notes: Chicken thighs can vary in size and thickness. You may need to adjust the cooking time for larger, thicker chicken thighs.
