“BEET it up!” – Beet Smoothie

When life gets tough…”BEET it up”! with a Beet Smoothie!

That’s right ! Among other things, Beets have been proven to help your mental health. Beets contain betaine, the same substance that is used in certain treatments of depression. They also contain tryptophan, which relaxes the mind and creates a sense of well-being. So if life has you a little stressed out..”BEET it up”!  You can whip up this beet smoothie in under 5 min. and start feeling the goodness right away.

If you haven’t jumped on the beet bandwagon yet..this is a great place to start. The combination of strawberries, medjool dates, coconut and coconut water with a touch of vanilla soften the earthy taste of beets and make this smoothie perfect for any time of the day.

For the base of this smoothie I’m using coconut water. I’m a big fan of coconut water! It’s rich in nutrients, and contains five essential electrolytes ( calcium, magnesium, phosphorous, potassium, and sodium) which helps make it the ultimate thirst quencher and a tasty alternative to water. It’s also a good alternative to sports drinks. In fact, the potassium content in coconut water is almost twice the amount in a banana. Balancing electrolytes is important for the optimal health of muscular, cardiovascular, nervous, and immune systems.

When the good folks at Cocozia recently asked if I’d like to try their coconut water I was delighted . I found the taste to be exceptional and liked the fact that the only ingredient in the water is “organic coconut water”. I also found it makes a great addition to smoothies and ups the nutritional value and health benefits. Cocozia is distributed through Amazon so if you’re interested in finding out more about their pure coconut water you can check them out here (affiliate link). Coconut water is becoming increasingly popular (well, at least here in Seattle) and it’s possible to find other brands in the local grocery store.

Ingredients

  • 1 cup coconut water
  • 1 medium beet peeled and cut into pieces
  • 6 strawberries
  • 3 medjool dates
  • 2 Tablespoons coconut shredded or flaked
  • 1/2 teaspoon vanilla extract
  • ice cubes optional

Instructions

  • Place all ingredients in a blender and blend until smooth. Garnish with additional coconut flakes if desired.
  • Sip! Slurp! Enjoy!...repeat.

    Totally loving the vibrant colour of this smoothie! I always make smoothies in the morning for breakfast so I need to try this beetroot recipe. Thanks for the delicious and great recipe idea..
