    Hummus Pizza

    Hummus Pizza - A quick and easy lunch or dinner. Ready in less than 5 min! ( yes for real!)  Warm naan bread (or pita bread) topped with Mediterranean favorites; hummus, tomato, cucumber, avocado and feta.

    Pizza! Hummus! Two of my favorite things!

    I could eat pizza pretty much every day , same goes for hummus…it never really occurred to me that I could eat the two of them together (light bulb moment!)..that is until I was out of pita bread and looking for something to dip in my new container of hummus.

    I thought I could probably toast the naan bread I had in the freezer (Trader Joes frozen tandoori naan bread..also a staple- if you haven’t tried it, you really have to! ) and make myself a salad with the fresh cucumber , avocado and tomatoes I had, maybe a sprinkle of feta…sounded like a good dinner option!

    I toasted the naan bread and BAM! Just like that I got a crazy idea and decided to put the hummus ON the naan, instead of dipping it ..which lead to adding the cucumbers, avocado, tomatoes , and feta..and just like that my new favorite thing..the” Hummus Pizza” was born!

    Just going to warn you…it’s a bit addictive!

    You can use whatever pizza base you like (homemade pizza dough, prepared pizza dough, pita bread, and of course naan bread) the “Hummus Pizza” is delicious with any of them! and easy! If you are using homemade pizza dough or prepared pizza dough you will want to cook the dough before adding the hummus and toppings.

    Since my initial discovery of the “Hummus Pizza” it’s become a staple around here. You can switch up the vegetables for whatever you like or whatever is in season. Grilled eggplant, roasted red pepper and feta is another great combination!( Picking up a few roasted or grilled veggies from the salad bar at your local market (like Whole Foods) is a great way to save time).

    Quick and easy (literally less than 5 min.) you can have a healthy lunch or dinner on the table, or try cutting the pizza  up into bite size pieces and serve as an appetizer.

    Ingredients

    • 2 individual naan breads or pita bread
    • 2 Tbsp hummus
    • 1 cup spinach leaves
    • ½ cucumber sliced
    • ½ avocado sliced
    • 10 cherry or grape tomatoes
    • 2 Tbsp crumbled feta cheese
    • ½ lemon
    • olive oil for drizzling
    • salt and pepper to taste

    Instructions

    • Toast the naan bread (or pita bread) in toaster oven or under broiler in oven.
    • Spread a layer of hummus on naan bread. Top with spinach, cucumber, tomatoes and crumbled feta. Drizzle with olive oil and a squeeze of lemon juice. Salt and pepper to taste.
