    Mini Caprese Bites

    How cute are these little Italian inspired Caprese Bites? Badda Bing...Badda Boom! you can whip up these cuties in just a couple of minutes. They are a great stand alone appetizer for your family get togethers, office potluck or girls night in. ( or any other time you want a little burst of tomato, mozzarella & basil deliciousness!)

    Need to put together a bigger spread ? Let these caprese bites be a part of your anitpasta platter. Serve with olives, cubed cheeses, salami, roated asparagus & peppers, fresh tomatoes, proscuitto wrapped melon or anything else that grabs your fancy.

    Mini Caprese Bites

    Ingredients

    • 24 marinated mini mozzarella balls
    • 12 cherry or grape tomatoes
    • 12 fresh basil leaves torn in small pieces
    • sea salt optional

    Instructions

    • Cut tomatoes in half. Layer one piece of torn basil, 1 mozzarella ball, another piece of torn basil, and half a tomato (flat side facing down, so they can stand on their own) on a toothpick.. Repeat until all bites are made. Rub some of the remaining flavored oil that the mozzarella balls were packed in on the tomatoes to add some extra flavor. Add a sprinkling of sea salt if desired.

    These make a great stand alone appetizer or can be added to an antipasta party platter.
