    Nutella + Chocolate Covered Strawberry Brownies

    Nutella + Chocolate Covered Strawberry Brownies- Rich fudgy brownies topped with fresh strawberries and a chocolate Nutella drizzle.  Perfect for Valentines Day or anytime you need an easy sweet treat {GF, Grain Free and easily Paleo}

    With Valentines Day right around the corner I thought it might be the perfect time for an quick and easy sweet treat! One that's been made a tad bit healthier.

    So what exactly makes these ultra-rich brownies a bit healthier? 

    1. No refined white sugar - instead I'm using coconut sugar (easily found at most grocery stores). One of the benefits of coconut sugar is that it has a lower glycemic index ( the measure of how quickly a particular food raises your blood sugar levels) than refined white sugar. Another benefit is that coconut sugar contains nutrients like zinc and iron as well as antioxidants ( not so with white sugar).
    2. No white flour- Almond flour replaces all-purpose white flour in this recipe. The only ingredient in almond flour is ground almonds, which makes it a good gluten-free option as well as being low in carbohydrates, high in fiber, rich in vitamins and minerals ( like iron, magnesium, potassium and vitamin E). and also a good source of protein. White flour on the other hand has very little nutritional value.

    While these brownies are super delicious all on their own we're kicking them up a notch on the decadence ladder by topping them with fresh sliced strawberries and a chocolate Nutella drizzle.

    Want to make these brownies Paleo? - super simple...make sure the chocolate chips you are using are Paleo ( like Enjoy Life brand) and omit the Nutella. No substitutions for the Nutella are necessary however you could use 1 tsp of coconut oil as a substitute if you'd like.

    Recipe Notes: 

    Although these brownies with the fresh sliced strawberries can be stored in the refrigerator for up to 3 days ( in an airtight container) I think they taste best when the strawberries and chocolate Nutella drizzle are added just prior to serving.

    If the whole batch will not be consumed at one time, consider storing the brownies in the refrigerator and topping the desired portion with fresh strawberries and chocolate Nutella drizzle just prior to eating. Chocolate chips and Nutella can be heated (in a coffee mug/microwave proof bowl) in the microwave. Heat in 30 second increments, stirring in between increments until chocolate chips are melted, and then drizzle over brownies.

    Ingredients

    For the Brownies

    • 1 cup semisweet or bittersweet chocolate chips
    • ½ cup coconut oil or butter
    • 1 cup almond flour
    • 3 Tbsp cocoa powder
    • ½ tsp baking powder
    • ½ tsp salt
    • 3 large eggs
    • 1 cup coconut sugar or granulated sugar
    • 2 tsp vanilla extract

    For the topping

    • 1 cup chopped fresh strawberries
    • ¾ cup dark chocolate chips
    • 3 Tbsp Nutella

    Instructions

    • Preheat oven to 350° F. Spray an 8 x 8 baking pan with non-stick cooking spray.
    • Place the chocolate chips and coconut oil in a large glass bowl over a pot of gently boiling water ( you want the bottom of the bowl to be just above the water line in the pot). Stirring occasionally until the chocolate chips and coconut oil are melted and well combined. Set aside and let cool while preparing the other ingredients.
    • In a medium bowl, whisk together almond flour, cocoa powder, baking powder and salt. Set aside.
    • In a separate large bowl, whisk together eggs, coconut sugar, and vanilla. Add the cooled chocolate mixture to bowl and mix thoroughly. Add the almond flour mixture and continue to mix until all ingredients are combined.
    • Pour mixture in prepared baking pan and bake for 25 minutes. Allow brownies to cool completely before topping .

    Topping

    • When brownies are completely cooled, spread the strawberries evenly over the brownies.
    • In a large glass bowl over a pot of gently boiling water combine chocolate chips and Nutella. Stirring occasionally until chocolate chips are melted and ingredients are well combined.
    • Drizzle mixture over strawberries. Refrigerate for at least 15 mins. before cutting brownies into 2" inch squares.
    • Store brownies in an airtight container in the refrigerator for up to 3 days.

    Notes

    To make these brownies Paleo- use Paleo chocolate chips ( such as "Enjoy Life" brand available on Amazon) and omit Nutella.
