    Easy Honey Baked Salmon Recipe

    Baked Salmon- There is just something magical about Salmon + Honey!  It's like the honey perfectly engulfs the salmon and locks in all the flavor and juiciness and what you get is a virtually fool-proof way to bake moist, flavorful, salmon. Season it with a a few spices { like smoked paprika, cumin and coriander} and it's just flavor perfection. Did I mention it was healthy too!

    Why Salmon is a great choice for a healthy diet:

    Salmon is chock full of Omega 3’s, those fatty acids we all need that our bodies can't make. We have to get them from food or supplements. Omega 3’s have been shown to help with all kinds of wonderful things like lowering the risk of heart disease, depression, dementia, and even arthritis. (whew! That’s a lot of good !)

    How to Make Perfect Baked Salmon:

    To make perfect baked salmon we want to make sure the salmon is seasoned just right to bring out/enhance the flavor without overpowering it. We also want to make sure the salmon is cooked so that is juicy, pink and flaky but not overdone.

    1. Marinate the salmon in a simple marinade of honey, olive oil, lemon and spice (smoked paprika, cumin and coriander) for 10-20 mins.
    2. Place the salmon fillets (skin side down) on a foil lined baking sheet and pop them in the oven. Bake for about 15-20 minutes (depending on the thickness of the salmon). Allow to rest about 5 minutes and serve.

    Yep, it's really that easy!

    Recipe Notes:

    The salmon continues to cook once you've removed it from the oven. You'll want to error on the side of removing the salmon when it is still looking just a tiny bit undercooked (darker pink). By the time the salmon has rested (5 minutes) you should have a perfectly cooked fillet.

    How to serve Baked Salmon:

    Baked salmon is so versatile you can serve it so many ways:

    1. Main Course-As a main course (oh course) paired with your favorite sides like Parmesan Roasted Broccoli or Cauliflower Mashed Potatoes
    2. Salad- top your favorite salad (like spinach or Caesar)
    3. Sandwich- between two pieces of artisan bread as a tasty sandwich ( with Sweet Potato Tots)
    4. Pasta- you can use two forks and flake the salmon and add to a  big bowl of pasta and fresh veggies.

    The possibilities are endless!

    Ingredients
      

    • 2 salmon fillets approx.5- 6 oz. each ,skin on (wild King or your favorite variety)

    Marinade

    • 2 tablespoon olive oil
    • 2 tablespoon honey
    • 1 tablespoon lemon juice
    • 1 teaspoon smoked paprika
    • ¼ teaspoon ground coriander
    • ¼ teaspoon cumin
    • ½ teaspoon salt
    • pepper to taste

    Instructions
     

    • Preheat oven to 375F
    • Rinse salmon and pat dry with paper towel. set aside
    • Mix marinade ingredients thoroughly in a medium bowl (large/deep enough to fit salmon) Add salmon and let marinate 10-20 minutes.
    • Arrange salmon on a foil (or parchment paper) lined baking sheet, skin side down. Reserving remaining marinade for later.
    • Bake until salmon is cooked through to your liking approx. 15-20 min.,basting ½ way through with remaining marinade. Let salmon rest 5 min. (outside of oven) before serving (Salmon will continue to cook during this time so keep this in mind when removing salmon from oven) .
