"Insanely Good!" Green Juice {or Mocktail} - Step up your green juice game! Start your day with a boost of energy from this vibrant and zesty blend. Or, add a few dashes of spices and serve over ice to make it a Mocktail (it tastes like a Green Bloody Mary!) A healthy and nutritional option for your St. Patrick's Day or Easter Brunch celebrations, or any day you want to infuse your body with goodness.
I really didn’t know what to call this blend of 7 healthy fruits and vegetables ( granny smith apples, cucumber, arugula, celery, spinach & parsley) . I whipped up batch number one with the fruits and veggies I had on hand. It was SO good I went out and bought more of the same ingredients and made another batch the following day! And so on…I’m a bit obsessed at the moment. Each time I sip on this new blend I find myself saying “this is so insanely good!”. So that’s what I’m calling it, "Insanely Good Green Juice! "
What makes this particular green juice so insanely good? In my opinion it’s the addition of 3 tasty ingredients : arugula, tomatoes, and a pinch of cayenne pepper.
Arugula- Game changer! The peppery taste of arugula works really well with the cucumber, celery, spinach and parsley. Health benefit: nutrient dense Arugula is an immune-boosting, high antioxidant food that can help improve almost every system in the body. It helps with heart health, eye health, lowers inflammation and has cancer fighting properties.
Tomatoes- are not something you usually find in a green juice but the addition of just a small amount give this juice extra flavor and depth. Health benefit: Tomatoes are the major dietary source of lycopene which has been linked to many health benefits including reduced risk of heart disease and cancer.
Cayenne- just a pinch gives this blend a little kick of heat. Health benefit: helps digestion, improves circulation, lowers cholesterol and helps prevent heart disease.
Make this incredibly tasty green juice into a Mocktail by adding a big fancy ice-cube (or regular ice cubes) a dash of Worcestershire sauce and some fresh cracked pepper.
Want to get extra fancy? you could salt the rim of the glass with pink Himalayan salt or seasoned salt. It tastes like a green Bloody Mary! Perfect for brunch , St. Patrick's Day , or any time you want to sub in some good healthy nutrition instead of a cocktail.
Recipe Notes:
- This particular recipe works best with a juicer ( I use this juicer) but if you don’t have one you can adjust the ingredients and use your blender to make a smoothie ( 1 Granny Smith apple, 1/2 cucumber, 1 cup arugula, 2 stalks celery, 1 /2 cup spinach, 2 Tbsp fresh parsley, 1 vine ripened tomato, squeeze of lemon, pinch of cayenne, 1/2-1 cup water- Cut all fruit and vegetables into small pieces and add to blender. Add water to achieve desired consistency)
- If you’re watching your sugar grams you can make this easy swap – you can 1) omit one apple or 2) use one large cucumber instead of the two granny smith apples. ( so you’ll be using two cucumbers total- one for the swap and one that the recipe requires) .
"Insanely Good ! " Green Juice { or Mocktail}
Ingredients
- 2 Granny Smith apples
- 1 cucumber peeled
- 2-3 cups arugula
- 3-4 stalks celery
- 1 cup spinach
- 1 large handful of parsley
- 1 large vine ripened tomatoes or 5-6 cherry tomatoes
- 1 tsp lemon juice
- Pinch of cayenne
- 2-3 drops Worcestershire sauce
- Celery stalks/spinach/lemon slices/parsley for garnish optional
Instructions
- Wash all produce well. Cut apples, cucumber, celery as needed to fit through juicer.
- Add apples, cucumbers, arugula, celery, spinach, parsley, and tomato through the juicer. Add a squeeze of lemon ( approx. 1 tsp) and a pinch of cayenne to juice mixture.
- Serve immediately
To make Mocktail
- Serve over ice, add a 2-3 drops of Worcestershire sauce and fresh cracked pepper. Garnish with celery stalks and lemon slices.

I make a similar concoction, adding to the apple/cucumber/celery mix: one peeled lime, one shot of apple cider vinegar, one sprig of mint and one sprig of rosemary, flax seed, hemp seed, chia seed, and kale. Tastes almost like a margarita.
