    White Chocolate Cinnamon Roll Energy Bites

    Sweet ,sweet cinnamon and sugar smells wafting through the air…I wonder if they actually pump out the smell from the shop and into the mall? The smell is just so utterly delicious that I usually have to stop and sniff for a few seconds (ok maybe a bit more). Slightly like a blood hound with my nose in the air and taking in as big a breath as I can. I just want to inhale the aroma. All of it!

    I’m always secretly hoping that they will have samples…I don’t know if it’s fortunate or unfortunate but they rarely ever do. One bite is all I really want .

    I’m talking about Cinnabon…I’m not sure how they do it, but my oh my!! is that smell amazing!!

    That’s the inspiration behind these energy bites…sweet cinnamon goodness!

    No..no....I’m not promising that these will taste JUST like a Cinnabon (they don’t have 800+ calories or 59 grams of sugar like one Cinnabon does either!) but if you’re looking for some sweet cinnamon and white chocolate goodness that’s got some nutritional value…these have got you covered.

    What’s even better (besides that they taste all white chocolatey cinnamon good) is that they are super simple to make. Only six ingredients(oats, honey, peanut butter, white chocolate chips, cinnamon, and vanilla) and you literally just add all the ingredients to a bowl and stir.

    To form into the cute little nuggets (balls) { did I just really say “nuggets and balls” all in one sentence…haha.} into those little rolly polly bites, just pop the mixture in the fridge for about 30 min. so that it’s easier to form into these must have white chocolate cinnamon energy “best thing you’ve had in a while” bites.

    They are perfect for those late afternoon pick me ups or as a pre/post workout snack.

    White Chocolate Cinnamon Roll Energy Bites

    Ingredients

    • 1 cup rolled oats
    • ½ cup peanut butter
    • ½ cup white chocolate chips
    • ⅓ cup honey or agave
    • 1 tsp vanilla extract
    • ¾ tsp cinnamon

    Instructions

    • Combine all ingredients in a medium bowl and stir to mix thoroughly. Refrigerate mixture for at least 30 minutes.( up to 1 hour).
    • Form into 1 inch balls.
    • Store in an airtight container in the refrigerator.

    Optional- on a flat surface(like a plate) combine a pinch of sugar and a pinch of cinnamon. Roll energy bites for a little extra cinnamon flavor.

        Hello Susan. I have made these energy balls several times and I just put a batch in the fridge to chill. These balls are heavenly! I've also shared the recipe with my aunt and she is just as crazy about them as I am. Thank you so much for creating such a delicious treat.
